Sumptuous Soba Salad
Soba salads are one of my absolute favorite things to make for my family. Soba is packed with Vitamin B, minerals and has nearly twice the amount of protein than rice. I added chopped yellow peppers and roasted broccoli separately in the miso sauce from this fabulous Food & Wine recipe. The tomatoes were so good on their own that I made them again yesterday for lunch. Enjoy or, as they say in Japan, Itadakimasu!
